Msemen (Moroccan Flatbread)

ngredients (Makes about 8 flatbreads)

  • 3 cups all-purpose flour
  • 1 cup fine semolina (optional but recommended)
  • 1 teaspoon salt
  • 1 teaspoon sugar (optional)
  • 1 teaspoon dry yeast (optional for softer texture)
  • 1 cup warm water (adjust as needed)
  • 1/4 cup vegetable oil (for shaping)
  • 1/4 cup melted butter (for layering)
  • Extra flour for dusting

Instructions

  1. Prepare the Dough
    • In a large mixing bowl, combine the flour, semolina, salt, sugar, and yeast (if using).
    • Gradually add warm water while kneading until you get a smooth, elastic dough.
    • Knead for about 10 minutes, then cover with a cloth and let it rest for 30 minutes.
  2. Divide and Shape
    • Divide the dough into equal-sized balls (about the size of a golf ball).
    • Coat each ball lightly with oil to prevent sticking.
  3. Flatten and Fold
    • Take one ball and flatten it with your hands or a rolling pin on a greased surface.
    • Brush the surface with melted butter and a little oil.
    • Fold it into a square (or circle, if making paratha) by folding the edges inward.
  4. Cook the Flatbreads
    • Heat a non-stick pan or griddle over medium heat.
    • Place one flattened dough piece and cook for about 2-3 minutes per side, flipping until golden brown.
    • Press gently with a spatula to help it puff up and develop layers.
  5. Serve Warm
    • Serve with honey, cheese, or your favorite dipping sauce.
